Uji Hedonik: Rolade Hati Ayam (ROLATI) sebagai Alternatif Makanan untuk Mencegah Anemia pada Balita

Anaemia is a condition characterised by low haemoglobin levels in the blood. It is prevalent among young children in Indonesia, primarily due to iron deficiency. The development of iron- and protein-rich snacks has been identified as a potential preventative measure. Chicken roulade with added chicken liver (ROLATI) represents a food product innovation with the potential to increase iron intake in young children. The objective of this study was twofold: firstly, to ascertain the level of acceptance and estimated nutritional content of ROLATI, and secondly, to identify the optimal formula as an alternative food for the prevention of anaemia. The experimental study design utilised a Completely Randomised Design (CRD), encompassing three formulas based on the ratio of chicken meat to chicken liver. The first factor (F1) was 80% accurate, the second factor (F2) was 60% accurate, and the third factor (F3) was 50% accurate. The organoleptic testing was conducted by 50 semi-trained panellists using a hedonic test for the parameters of colour, aroma, texture, and taste. The results were then analysed statistically using the Kruskal- Wallis test. The results demonstrated that no statistically significant differences were observed across all organoleptic parameters (p > 0.05), although F1 exhibited a tendency to exhibit the highest mean values. Nutritional content estimates demonstrated that F3 exhibited the highest iron and protein content, specifically 2.4 mg of iron and 6.5 g of protein per serving. The present study employed the exponential comparison method (ECM) to determine the most efficacious formula. The analysis revealed that F3 was the optimal formula, as it demonstrated superior performance in the parameters with the highest weighting, namely iron and protein.
